The blood of pig, its belly and intestines are used in the black pudding. They also eat wild rabbits, opossums, rodents, iguana, turtle, and many local wild animals. This cuisine is though influenced by many other cuisines but these dishes tell that they do hold their own when it comes to Caribbean Cuisine.
