A gluten-free diet doesn't have to mean resigning yourself to a life without sandwiches, bread and butter and toast and marmalade for breakfast. It just requires an adjustment in your thinking and a willingness to experiment with gluten-free breads. Look for bread maker tips and recipes for gluten free bread to get you started making delicious bread that every member of your family will enjoy, even those who don't have to worry about their gluten intake.

Look for Bread Machines with a Gluten Free Cycle
Bread makers shave serious time off the task of making your own bread at home. A number of bread machines on the market have a gluten-free cycle to make it even easier to bake healthy, alternative bread recipes at home. In bread makers without a gluten free cycle, try using a rapid cycle with a single rise.

Experiment with Recipes
Baking bread with a gluten-free flour mix requires some special attention and extra steps. The most important element of the recipe is the flour blend - no single flour will make satisfying bread. Most gluten-less recipes are based on a specific flour blend - but many don't list the actual flours and proportions. Look for bread maker recipes that list the flours for gluten-free breads as separate ingredients so that you know you're using the blend that works best for the loaf you're making.

Follow the Instructions Provided with Your Appliance
Bread makers are not all created equal. Most work best if you follow a specific sequence in adding the ingredients. On the other hand, keep an eye on the process. Sometimes, bread machines need a little help, especially if you're using unconventional flours. Check the bread pan during the mixing cycle and scrape down the sides with a soft spatula to make sure all the flour is incorporated in the dough.

Start with Room Temperature Ingredients
Cold liquids inhibit yeast growth, so bring your liquids to at least warm temperature before adding them to the dough. If you're using eggs, warm them briefly in hot water before cracking them and adding them to the bread maker pan.

Use Less Liquid than Called for on Humid Days
Flour absorbs moisture and humid days can turn your chewy loaf into a gooey disaster. Start with less liquid than bread recipes call for on humid days and check the consistency of the dough during the mix cycle to see if it needs more liquid. Only add enough liquid to keep the dough soft and pliable.

Remove the Bread from the Bread Maker Pan ASAP
Get the loaf out of the pan as soon as possible after it is finished baking. The longer it sits in the bread machine, the soggier it will get.

Gluten Free Recipe
2 cups brown rice flour
1/2 cup potato starch
1/2 cup tapioca flour
2-1/2 teaspoons xanthan gum (or guar gum)
1/2 cup non-dairy milk substitute
1 1/2 teaspoons salt
3 tablespoons sugar
1-1/3 cups lukewarm water
1-1/2 tablespoons dry yeast
4 tablespoons butter, melted (or margarine)
1 teaspoon dough enhancer
3 eggs, room temperature

Add the ingredients to the pan of your bread maker in the order suggested by the manufacturer.
Use the white bread setting or, if the bread machine has one, the gluten free cycle.

Bread makers make it easier to live a gluten-free life. Keep your eyes peeled for gluten-less bread maker tips and recipes that you can add to your collection and enjoy the toothsome goodness of tea breads, yeast breads and even pizza dough, made in your breadmaker.
