A very interesting almond recipe is the almond finger cookies which are served and made during Halloween for treats instead of candies. The shape of the almond nut makes it creepy since the nuts are pointed and looks like witch's finger, plus the tricks made on the finger with some icing.
Making some almond finger cookies is as easy as working on a sugar cookie or you could make any flavoured cookie out of the finger of the cookies and just make sure to use the almonds for the nails.

The ingredients include:

5 cups of all-purpose flour
4 large eggs
1 ? cup softened butter
2 cups of white sugar
2 teaspoons of baking powder
1 teaspoon of salt
1 teaspoon of vanilla extract
? cups of raw almonds
1 tube red cake decorating gel

Preparation

Step 1: In a large bowl, whisk the flour, salt and baking soda. Beat the eggs together with the vanilla in another bowl before mixing it with the flour mixture in the large bowl. Use a separate bowl in mixing the butter and sugar for about 3 - 4 minutes until it becomes smooth and creamy before slowly mixing it with the wet ingredients using an electric mixer until smooth dough is achieved. Divide the dough in three parts and put it in a plastic wrap or cover the bowl. Chill the dough for at least two hours or up to a week. The dough is chilled to make it more firm and easier to be rolled and shaped up.

Step 2: On a thinly floured surface, roll the dough repeatedly and flip it from one side to the other and making it sure that it doesn't stick. Roll the dough with ? inch to ? inch thick. Make sure to keep the dough from sticking to the counter by continuously turning the dough by putting a little bit of flour every time you turn it. Shaping the cookies is one of the interesting parts of making some almond finger cookies. You can make the fingers thin or fat, long or short depending on your choice.

Step 3: You may use a teaspoon to measure the amount of dough used but make sure it's not too big since it will still expand during the baking process. The cookies could be of different sizes as long as it is shaped like a finger. Once shaped, start placing the raw peeled almonds to make it look like nails on top of the shaped cookies. Lift the designed cookies with the use of a spatula and place the cookies an inch apart on the ungreased chilled cookie sheets and refrigerate the unbaked cookies for about 15 minutes to keep the shape and the almonds intact.

Step 4: While waiting, preheat your oven up to 400 degrees F (200 degrees C) and place the shaped almond finger dough inside until golden brown. Apply some finishing touches with the use of your red decorating gel to make it more realistic.
