If you are on a diet, this kind of cookie is also good for you and it is just a simple Easter cookie recipe that is easy to make and good to eat. It is also a very old tradition in England. These homemade Easter cookies were baked and were made as a simple gift to mark the end of the Lenten season in a Christian tradition. This kind of cookie is so delicious that you may want to bake and eat them all year round.

Easter cookies are not just for Easter celebration. A Homemade Easter cookie can be a perfect gift for your friends and family. There is no time to waste and you will never hesitate to make it again for it's so delicious and easy to prepare.

Listed below are the ingredients and instructions on how to make homemade Easter cookies.

Ingredients:

* 1 egg yolk

* 2/3 cup or 100 grams of currants

* 1 extra tablespoon of caster sugar (for topping)

* 1 teaspoon of mixed spice

* 1/2 teaspoon of baking powder

* 1 and 1/3 cup of all purpose flour or 150 grams of plain flour

* 100 grams or 1 stick of butter

* 80 grams of caster sugar

Instructions:

To make the cookie, you must preheat the oven for 170 degrees Celsius or 350 degrees Fahrenheit. In a bowl of your hand mixer or electric mixer, beat the sugar and the butter until it becomes fluffy and light. Beat in also the egg yolk. Whisk together the baking powder, flour and mixed spice.

Add the butter mixture to the flour mixture. You can use a knife to mix it quite well. After that, you must mix in the currants. You must pull the dough together and blending it until it becomes smooth. Unlike some pastry that you need a cold hands, warm hand is perfect for this, as you want your butter to be softened.

On a lightly floured worktop, roll out the dough finely. Using a biscuit cutter cut the dough into 6 to centimeter rounds. You can also use a specialized Easter shaped cutter but round is the traditional Easter cookie shape.

Line the dough into a greaseproof paper lined on a baking tray. Sprinkle it first with sugar. Afterwards, bake it for at least 10-15 minutes until it's cooked and not too brown in color.

Transfer carefully the baked cookie into a wire rack. The cookie must be a little soft at first but it will become crisp as it cools. Store the cookie in an airtight container for at least two weeks. You can make at least 10-15 delicious homemade Easter cookies. You can also bundle them together. You can Wrap it in a film and tie with colorful ribbon of for a pretty and meaningful Easter gift.
