India is one of the countries that is known to make many of the curry dishes and one of these dishes is the Fish curry. This dish is one of the favorites especially in the eastern part of India. You will need to know the ingredients in order to learn how to cook fish curry. These ingredients are 2 pounds fish fillet preferably Tilapia, 2 inches Ginger root, 4 bay leaves, 7 red chilies, ? a tablespoon coriander powder, 2 chopped big tomatoes and 5 medium sized shallots or 2 medium onions. You also require cooking oil, 5 tablespoons mustard seeds, 3 tablespoons turmeric powder, 2 tablespoons garlic paste, 1 tablespoon cumin seed, 3 cups water as well as 3 tablespoons salt.

After getting all these ingredients you can now start with the preparation of the dish and here you have to follow several steps in order to have an irresistible dish. The first step will be mixing six ingredients which will include onions, mustard seeds, cumin seeds, 5 red chilies as well as 2 bay leaves in a grinder. The onions should be spared about one cup of onions that will be used later. After grinding these ingredients you can then set them aside.

The fish should then be cleaned and then cut into small pieces of fillets by keeping them about 3 inches in length. After the fish has been cut the pieces should then be placed in a plate and rubbed with about 2 teaspoons of salt. 2 teaspoons turmeric powder should be sprinkled and finally the garlic paste added. This should be mixed until the fish is coated evenly and then put aside for about half an hour so as it can marinade. After it has been marinated the oil can then be heated in a wok and then deep fry the fish for about 4 minutes on each side.

The fish should then be set aside in a clean plate. You should then use a new wok to pour oil in it and heat it. You can then proceed to add a pinch of cumin seed, a pinch of mustard seed, the remaining 2 chilies as well as the remaining 2 bay leaves. The next step will be to add a pinch of aniseed and then left to fume. The remaining onions can now be added and they should be allowed to brown a little. The ground paste, the cut tomatoes as well as the remaining turmeric powder should then be added.

A pinch of salt should then be added to taste and then stirred continuously and this should be done for approx 10 minutes and this is where the paste will no longer be sticking to the wok meaning that it is ready. The 3 cups of water should then be added and stirred until it boils. The fish that was set aside should then be added and left to boil for about 15 minutes where it should be ready for serving. You should then use coriander leaves as well as some lemon juice sprinkled on top to garnish the dish. This dish can be taken with other dishes which may include rice.
