You will need the following ingredients: Olive oil, 4 cups beef stock, 4 garlic cloves that have been peeled and smashed, One tablespoon of celery leaves chopped, 2 cups of red wine, 4 thyme sprigs devoid of leaves, 3 celery stalks chopped into pieces approximately an inch, A large sliced yellow onion, 4 pounds of bone in beef ribs, 3 big carrots that have been peeled and cut into quarters.

You will need to preheat the oven to about 350 degrees. Clean the ribs rinse them completely and dry them out by patting. Heat up your pan and pour in some olive oil. Have the ribs well seasoned with some pepper and salt. Proceed to brown evenly the ribs as you make sure to avoid crowding your pan. Add some carrots onions and celery. Cook them for about 4 to 5 minutes and stir them well until they start browning. Pour in the beef stock to an already deglazed pan. Do away with any yummy stuff that might have been left on the pan's bottom. On to this, add celery and thyme and stir continuously for 2 minutes. Add the wine plus the broth and cover for 2 or so hours. You have yourself a well undertaken short ribs recipe.
