Once they are completed, place them on paper towels to get rid of the excess oil.

A great side dish for this chicken cordon bleu recipe is mushroom sauce. When cooking dinner, you should start with the side dish, due to the fact the cordon bleu is tasty even though it is truly hot. So, take the mushrooms (champignons are the best for that dish) and cut them in halves. Chop the onions very finely, pour some oil in a wok, add the onions and then the mushrooms. Maintain the heat at a medium level for about 10 minutes. Once the mushrooms and the onions turn out to be tender, add 3 or 4 tablespoons of sour cream. Leave the pan on the stove for yet another minute, than add salt, pepper and fresh parsley to the composition. This mushroom sauce is excellent for the chicken cordon bleu.
